Mutton kababs
are delicious and flavorful meat appetizers that are popular in many cuisines around the world. Here's a simple and classic recipe for making mutton kababs:
Ingredients:
- 500 grams mutton (boneless), finely minced or ground
- 1 large onion, finely chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 2-3 green chilies, finely chopped (adjust to your spice preference)
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1 tablespoon lemon juice
- 2 tablespoons besan (gram flour) or roasted chickpea flour
- Salt to taste
- 2 tablespoons cooking oil (for greasing hands and grill)
Instructions:
In a large mixing bowl, combine the finely minced mutton, chopped onions, garlic, ginger, green chilies, coriander leaves, mint leaves, garam masala, cumin, ground coriander, turmeric powder, red chili powder, lemon juice, and salt.
Mix all the ingredients well with your hands, ensuring that the spices are evenly distributed throughout the mutton.
Add the besan (gram flour) or roasted chickpea flour to the mixture. This helps in binding the kababs and prevents them from falling apart while cooking. Mix it thoroughly with the mutton mixture until well combined.
Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours. Chilling the mixture helps the flavors to meld and the kababs to hold their shape better.
After the marination, take the mutton mixture out of the refrigerator. Grease your hands with a little cooking oil to prevent the mixture from sticking to your hands.
Take a small portion of the mutton mixture and shape it into a flat round kabab. You can make them in oval or circular shapes as per your preference.
Repeat the process until you've used up all the mutton mixture.
Preheat your grill or barbecue. If you don't have one, you can also cook these kababs on a stovetop griddle or in the oven.
Brush the kababs lightly with oil on both sides.
Cook the kababs on the grill or griddle until they are cooked through and have a nice golden-brown color on the outside. If using the oven, preheat it to 200°C (400°F) and bake the kababs for about 20-25 minutes, flipping them halfway through the cooking process.
Once the kababs are done, serve them hot with green chutney, sliced onions, and lemon wedges.
