Recipe: Irish Beef Stew


Ingredients:


- 2 pounds (about 900g) beef stew meat, cut into chunks

- 2 tablespoons olive oil

- 2 onions, chopped

- 4 cloves garlic, minced

- 4 cups beef broth

- 2 cups water

- 4 large potatoes, peeled and cut into chunks

- 4 carrots, peeled and sliced

- 2 teaspoons dried thyme

- 2 teaspoons dried rosemary

- Salt and pepper to taste

- Chopped fresh parsley for garnish


Instructions:


1. In a large pot, heat the olive oil over medium-high heat. Add the beef chunks and brown them on all sides. Remove the beef from the pot and set it aside.

   

2. In the same pot, add the chopped onions and minced garlic. Sauté until the onions are translucent and fragrant.

   

3. Return the browned beef to the pot and add the beef broth and water. Stir to combine and bring the mixture to a simmer.

   

4. Add the potatoes, carrots, dried thyme, and dried rosemary to the pot. Season with salt and pepper to taste. Stir well.

   

5. Cover the pot and let the stew simmer over low heat for about 2 to 2.5 hours, or until the beef is tender and the flavors have melded.

   

6. Check the seasoning and adjust as needed before serving.

   

7. Ladle the Irish Beef Stew into bowls, garnish with chopped fresh parsley, and serve with crusty bread on the side.
