Mutton Sulemani Karahi
is a special and aromatic dish from the Indian subcontinent, known for its unique blend of spices and flavors. Here's a traditional recipe to make Mutton Sulemani Karahi:
Ingredients:
- 500 grams mutton, cut into small pieces
- 3 tablespoons ghee or cooking oil
- 2 large onions, finely sliced
- 2 tomatoes, finely chopped
- 2 teaspoons ginger-garlic paste
- 1 tablespoon green chili paste (adjust to your spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1 teaspoon garam masala
- 1/2 teaspoon black pepper powder
- 1/2 cup plain yogurt, whisked
- 1 tablespoon lemon juice
- Fresh coriander leaves for garnish
- Salt to taste
Instructions:
In a heavy-bottomed karahi or deep frying pan, heat the ghee or cooking oil over medium heat.
Add cumin seeds to the hot oil and let them splutter for a few seconds.
Add the finely sliced onions to the karahi and sauté them until they turn golden brown.
Now, add the ginger-garlic paste and green chili paste. Cook for a minute or until the raw smell disappears.
Put the chopped tomatoes into the karahi and cook until they become soft and the oil starts to separate from the mixture.
Add the mutton pieces to the karahi and mix well with the onion-tomato mixture.
Season the mutton with coriander powder, turmeric powder, red chili powder, and salt. Mix everything thoroughly to coat the mutton with spices.
Cover the karahi with a lid and cook the mutton on low to medium heat until it becomes tender. This may take around 30-40 minutes, depending on the meat's tenderness.
Once the mutton is cooked, add whisked yogurt to the karahi. Mix it well, ensuring the yogurt is evenly distributed.
Continue to cook the mutton for another 5-7 minutes on low heat to allow the flavors to blend.
Sprinkle garam masala and black pepper powder over the mutton. Mix them in and cook for another 2-3 minutes.
Squeeze lemon juice into the karahi and give it a final stir.
Garnish the Mutton Sulemani Karahi with fresh coriander leaves.
