Roast Chicken

Ingredients:
- - 1 whole chicken (approximately 4-5 pounds/1.8-2.3 kg)
- - 2 tablespoons olive oil or melted butter
- - 1 teaspoon salt
- - 1/2 teaspoon black pepper
- - 1/2 teaspoon garlic powder
- - 1/2 teaspoon onion powder
- - 1/2 teaspoon dried thyme
- - 1/2 teaspoon dried rosemary
- - 1/2 teaspoon paprika
- - 1 lemon, cut into wedges
- - 1 onion, cut into wedges
- - 3-4 garlic cloves, peeled
- - Fresh herbs (such as rosemary, thyme, or sage)
Instructions:
1. Preheat your oven to 425°F (220°C).
2. Remove the giblets from the chicken cavity if they are included. Rinse the chicken inside and out under cold running water and pat it dry with paper towels.
3. Rub the chicken all over with olive oil or melted butter, making sure to cover both the outside and inside of the chicken.
4. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, dried thyme, dried rosemary, and paprika.
5. Sprinkle the seasoning mixture evenly over the chicken, rubbing it in to coat the skin.
6. Stuff the cavity of the chicken with lemon wedges, onion wedges, garlic cloves, and fresh herbs.
7. Truss the chicken with kitchen twine to secure the wings and legs, which will help it cook more evenly.
8. Place the chicken on a roasting pan or a large oven-safe skillet.
9. Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature in the thickest part of the thigh reaches 165°F (74°C) and the juices run clear.
10. If the chicken starts to brown too quickly, you can tent it with foil to prevent burning.
11. Once the chicken is done, remove it from the oven and let it rest for 10-15 minutes before carving.
