Dam ka Keema

 "Dam ka Keema" 

                                    is a delicious Indian subcontinental dish where the meat is slow-cooked with spices in a sealed pot to retain maximum flavor and aroma. Here's a recipe for making this flavorful dish:





Ingredients:

  • - 500 grams ground mutton (keema)
  • - 3 tablespoons oil or ghee
  • - 2 large onions, finely sliced
  • - 2 tomatoes, finely chopped
  • - 2 teaspoons ginger-garlic paste
  • - 1 teaspoon cumin seeds
  • - 1 cinnamon stick
  • - 4-5 green cardamom pods
  • - 4-5 cloves
  • - 1 bay leaf
  • - 1 teaspoon red chili powder (adjust to your spice preference)
  • - 1/2 teaspoon turmeric powder
  • - 1 teaspoon coriander powder
  • - 1 teaspoon garam masala
  • - 1/2 cup yogurt
  • - Salt, to taste
  • - Fresh coriander leaves, for garnish
  • - Lemon wedges, for serving


Instructions:


1. Wash the keema thoroughly and drain excess water. Set it aside.


2. Heat oil or ghee in a heavy-bottomed pan or a pressure cooker over medium heat. Add cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Fry them for a minute or until they release their aroma.


3. Add finely sliced onions and sauté until they turn golden brown.


4. Stir in the ginger-garlic paste and sauté for another couple of minutes until the raw smell disappears.


5. Add chopped tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook the masala until the oil starts to separate from the mixture.


6. Now, add the keema to the masala and mix well. Let it cook for about 5 minutes on medium heat.


7. Lower the heat, add the yogurt, and mix thoroughly. Cover the pan or pressure cooker with a tight-fitting lid. If using a pan, you can also place a heavy plate or tava (griddle) underneath and cook on low heat to prevent burning.


8. Cook the keema on low heat for about 30-40 minutes or until the meat is tender and well-cooked. Stir occasionally to ensure it doesn't stick to the bottom.


9. Once the keema is cooked, check for seasoning, and add more salt or spice if required. Sprinkle garam masala over the keema and mix well.


10. Garnish with fresh coriander leaves.


Serve the Dam ka Keema hot with roti, naan, or rice. You can also squeeze some lemon juice over it for an extra tangy flavor. Enjoy this flavorful and hearty dish with your loved ones!
